Stadium & Venue Knowledge Hub
Built for the Rush
Smarter foodservice strategies for stadiums, arenas, raceways and high-volume venues — designed to improve speed, flow, profitability and the fan experience.
Crowd ready at every event
Modern stadium catering is no longer simply about feeding crowds.
Stadium and venue catering is fast-moving, event-driven and remarkably consistent. Operators can estimate attendance using ticket sales and event history, but once the gates open, every outlet, service point and team member must be ready for the crowd.
Stadium retail spaces are undergoing a rapid transformation. User identity, self-service, cashless transactions and smarter retail environments are changing how patrons select, purchase and collect food and beverages.
Safe food-holding strategies, intelligent layouts and purpose-built technology can help operators across stadiums, arenas, ovals, sports centres, pavilions and raceways improve profitability while lowering operating pressure in high-volume foodservice environments.
Every decision — from architecture and food preparation to holding, merchandising and point of sale — affects how quickly customers move, how much they spend and how much of the event they get to enjoy.

The scale of stadium catering
A serious food business on a massive scale
Stadium catering involves challenging logistics, extended teams of chefs, servers and runners, and a wide range of customer needs — from fine dining and corporate hospitality to a pie in the hand and a beer.
At Australia’s largest stadium, the Melbourne Cricket Ground, a capacity crowd of 100,000 spectators generates one of the biggest food and beverage operations in Australian sport.
On a typical sold-out event, almost every attendee purchases a drink, while approximately two-thirds of patrons also enjoy a meal or snack. Meeting that demand requires a carefully coordinated mix of premium dining, corporate hospitality and high-volume public retail.
Catering operations at the MCG
One venue. Three very different hospitality environments.
2,800
Premium Hospitality
Exclusive dining venues provide high-end culinary experiences with table service and curated multi-course menus, often showcasing seasonal and locally sourced ingredients.
5,600
Corporate Hospitality
Private suites and dedicated function spaces offer premium buffets, grazing stations and tailored food and beverage packages for major-event guests.
52,000+
Public Food & Beverage
The largest proportion of food sales occurs through retail outlets and concession stands, where speed, volume, visibility and reliability directly influence commercial performance.
The commercial reality
Even the best food offering loses impact when fans spend their break standing in line.
In a stadium, accessibility is part of the product. Food must be visible, ready and easy to purchase so patrons can return to the event without missing the moment they came to see.

Cossiga at the Melbourne Cricket Ground
Developed for performance under pressure
Food volumes at this scale demand significant logistical planning and operational coordination. At the MCG, Delaware North Australia manages a complex retail operation built around short, intense periods of customer demand.
Cossiga worked closely with Mick Birmingham and the Delaware North Australia retail team to develop the OTSHC series — a purpose-built heated food merchandiser for high-volume venue service.
The brief addressed the limitations of older equipment, including insufficient heat, poor lighting and outdated presentation. A prototype was presented within four months, with the finished model ready for trial within six months.
From the MCG retail team
“We have been extremely impressed with the Cossiga OTSHC series heated chutes. The slimline design provides a clean, modern presentation while maximising serving space.
The smart horizontal shelf configuration is practical and efficient, and the improved heat performance keeps food at the ideal serving temperature, even in this windy environment. They are also easy to manage and operate, making them a great addition to our foodservice operation.”

Purpose-built display solutions
Hot food performance, supported by smarter grab & go
At Cossiga, we support the shift towards faster, more flexible venue retail with display solutions designed for performance under pressure.
The OTSHC sits at the centre of this approach, delivering reliable packaged hot-food holding that helps meals remain safe, fresh and ready during peak surges.
For chilled food and beverages, the DTGOR provides high visibility grab & go merchandising that supports fast self-selection. Where uninterrupted replenishment is especially important, the TTGOR adds rear-loading access so staff can restock from behind the unit without interrupting customer flow.

Serving speed and quality without compromise
The business happens in short, high-pressure windows
In venue catering, timing is everything. Whether it is a halftime rush, a break in play or a pre-event surge, operators face the same challenge: serve more people, faster, without sacrificing food quality.
Self-selection plays a critical role. It allows customers to make faster decisions, reduces friction in the buying process and keeps lines moving. When food is clearly visible, attractively displayed and easy to access, customers can grab what they need and return to the action.
Self-service is not about removing service. It is about improving the system around it. Visibility, accessibility, replenishment and speed are the key drivers of success in high-volume environments.
Faster transactions
Clear product visibility and self-selection help customers make decisions more quickly.
Reduced congestion
Better access points and smarter layouts reduce pressure on queues and service counters.
Lower labour dependency
Efficient display and replenishment systems allow teams to focus effort where it adds most value.
Greater throughput
More customers can be served during the short trading windows that matter most.
Better fan experience
Less time in line means more time enjoying the event.
Stronger commercial performance
Improved flow and availability help venues capture more sales during peak demand.
Delivering an integrated food strategy
Perfectly Paired
In the stampede of daily operations, busy venues can become focused only on immediate demands. Independent consultants can provide a valuable peer review, bringing a fresh perspective and practical advice that can save thousands — and in major developments, potentially millions — of dollars.
“Our team provides end-to-end advisory services to ensure the food and beverage offering is seamlessly integrated into every stage of development. We work closely with the design team on new stadiums, from the initial user brief through to detailed design, to ensure catering services are embedded within the architecture and operational planning.”
Mark Wright, Managing Director — Perfectly Paired
Perfectly Paired specialises in stadium and venue strategy, helping operators plan for diverse event calendars, create exceptional culinary experiences and maintain or improve operational efficiency.
Their work also extends into procurement, financial forecasting and partner selection, helping ensure the catering strategy supports the venue’s long-term sustainability and commercial success.
Design for the event
Embed catering early
Foodservice works best when it is considered as part of the architecture, customer journey and operational plan — not added after the venue has already been designed.
Design for the operation
Plan beyond opening day
Equipment, workflow, staffing and procurement decisions must continue to perform across changing events, crowd profiles and commercial demands.
Applying stadium strategies to smaller venues
The principles remain the same
Every venue is different, but the fundamentals do not change. Professional advice, smart equipment, efficient layouts and well-planned food zones can transform even compact, high-traffic venues into smoother and more enjoyable environments.
From local sports pavilions and recreation centres to arenas and raceways, operators are adopting flexible, scalable solutions that reduce pressure on staff while improving service outcomes.
Cossiga works with partners across Australia to create food display solutions that maximise space, improve flow and deliver consistent results when it matters most.
